Finger Food for Babies – Baked Vegetable Fingers

When baby begins to show interest in and eat solid food on a regular basis, it is time to start trying out some new recipes that will be fun and tasty for your child as they practice using self feeding with finger foods.

This recipe for vegetable fingers is colorful and flavorful and will be an interest to baby with its colors and shape. Full of vegetables for a nutritious and vitamin packed snack or meal, cheese can be added to this recipe for additional calcium and vitamin D provided your child has already been introduced to milk products.

Ingredients

  • 1 cup broccoli florets, steamed and minced finely.
  • 1 potato, baked or boiled, peeled and mashed
  • 1 carrot, grated
  • 1/2 small red onion or shallot, minced
  • 1/2 C dried whole wheat breadcrumbs
  • 1 T water
  • 1 T olive oil
  • 1 t baking powder
  • 1 C grated cheddar cheese (optional)

Method

Heat oven to 375 degrees F

Combine all ingredients in a large bowl and mix well to incorporate.

Take a small amount of the mixture between your hand and roll into a tube shape.

Place ‘tube’ on a parchment paper lined baking sheet, or a baking sheet sprayed with vegetable cooking spray. Flatten the ‘tube’ slightly. Keep vegetable fingers about 2 m apart on the tray.

Bake the vegetable fingers for 20-25 minutes, flipping them over after 12 minutes using a spatula or a fish slice.

Cool slightly and serve slightly warm as finger food for your child.
