Finger Food for Babies Apple Oat Mini Muffins

There are many recipes for muffins but a lot of them are not as nutritious as required when considering what to make for a baby eating finger food.

Too many recipes for muffins, although delicious, contain a large quantity of sugar, making them tasty and appealing to an adult, but not necessary as healthy for a growing baby or toddler.

The following recipe for apple muffins is a great recipe to feed to the older baby who is experimenting and practising with finger foods. The great thing about this particular muffin recipe is that it contains no sugar at all but is sweetened by honey or apple sauce depending on the age of your child and the preference of the cook. Family members of all ages will enjoy the sweet apple and raisin bites in these mini muffins.

Muffins may be baked in regular sized muffin tins and served cut up for a smaller child.

Ingredients

  • 1 apple, peeled cored and grated
  • 2 egg whites
  • 1 C butter milk (make your own by placing 1 T lemon juice in a measuring cup and pouring milk on top to get a totally quantity of 1 C allow to stand 10 minutes to curdle)
  • 1 C rolled oats
  • 3/4 C all purpose flour
  • 1/4 C whole wheat flour
  • 1/2 C raisins
  • 1/4 C honey OR apple sauce
  • 1 1/2 t baking powder
  • 1 1/2 t ground cinnamon
  • 1/2 t ground cloves
  • 1/2 t salt

Method

  1. Mix together butter milk, oats and raisins and allow to soften for about 10 minutes
  2. In a separate bowl, mix together flours, baking powder, spices and salt
  3. Add egg whites and honey to the oat mixture and blend thoroughly.
  4. Add the dry mixture to the wet mixture, mixing until just moistened. Do not over mix or muffins will be tough and dense.
  5. Fold in grated apple
  6. Spoon apple oat muffin mix into prepared mini muffin tins, to about 3/4 full.
  7. Bake for 20-25 minutes
  8. Cool in pan for about 10 minutes and turn out onto a wire rack to cool completely.
  9. Store in an airtight container.
  10. These apple oat mini muffins freeze well and can be popped in the microwave for a quick snack or packed in a diaper bag for a snack on the go.
