Sweet Potato Cake

Babies love sweet potatoes. Brightly colored and packed with beta carotene and other vitamins recipes using sweet potatoes for babies eating finger food will be pleasing to their palate as well as to their eyes

The following recipe uses orange juice to flavor the sweet potato cake so be sure that citrus fruits are okay with your child before serving this finger food.

Ginger adds great flavor to the sweet potato cakes and introduces a new element of taste to your baby. Limit the amount added so that it won’t overwhelm your babies taste buds!

Ingredients

  • 1 Sweet potato, scrubbed, peeled and diced
  • 1/2 orange, freshly squeezed
  • 1/2 cm piece of peeled fresh ginger, finely grated

Method

Place sweet potato cubes in a pot and cover with cold water.

Add grated ginger to the pot

Bring the water to a boil over high heat. Reduce heat to medium and simmer until tender, about 12 minutes.

Drain the sweet potato cubes and ginger, and pour orange juice over them in the pot.

Using a potato masher, mash together until almost smooth

Spoon out small amounts and shape into a small flattish patty on a plate. Allow to cool.

The starches in the sweet potato will bind the patty together.

Once cool, break up the sweet potato cake and serve on a plastic plate or directly on baby’s eating tray so that they can pick up little pieces with their fingers.
